I have to say my best leftover recipe really isn't much of a recipe.
It's Pizza!
We try to eat pretty healthy around here, so we mostly have left over fish, chicken and veggies. When they start to pile up in the fridge we have ~ make your own pizza night.
Husband makes an awesome wholewheat pizza crust that doesn't take long at all. Each person rolls out their little ball of dough into the thickness they want and then just start piling on the goods that have been rescued from the fridge.
My tip for the pizza crust whether you make it yourself or buy it from the store is to spread a little olive oil on the crust before adding your ingredients.
Who says pizza has to have cheese? Son1 never puts cheese on his and son2 never puts veggies on his. He says pizza is no place for vegetables....
Try to add a little pizazz to the left overs with artichoke hearts, goat cheese, fresh basil, capers or olives.
So easy, so quick and voila... a cleaned out fridge!

Homemade pizza is the best!
One of the best pizzas I ever ate was smoked salmon and feta. Yum.
Almost never have leftover smoked salmon though.
Mmmm pizza with leftovers what a great idea! I love to go to the local pizza parlor and they'll sell you fresh dough if you ask for it for making your own pizzas. And this would be the perfect excuse to throw on my favorite toppings without as many dirty looks - black olives, pineapple and french fries!! ;)
