Pinned It and Did It

And the snow days continue...
So for my Pinned It and Did It, I decided to share one of my favorite soups I have ever found on Pinterest.

I have been making this soup for awhile now,
 but it just seemed like the perfect thing for all of the
 snow days we have been experiencing here.
The original recipe basically says to just throw the
 5 ingredients into a pot. 
 I like to soften my onions up first and then add the broccoli.
Next add the evaporated milk, chicken broth and cheese.
  Once the cheese melts, let simmer for about 15 minutes.
You can go ahead and eat it chunky style if you like. 
 I like to blend mine in the blender for a smoother texture.
Here is the end result. 
 It's not as creamy as a normal broccoli cheese soup,
 but it is every bit as delicious. 
 I like the lightened up version using
 evaporated milk instead of cream
 and using real cheese instead of Velveeta.

I highly suggest making some of this soup, you will love it.

I love using FF evaporated milk in place of cream in soup. This looks like a perfect recipe for a dreary day! :)

Sounds so easy and delish! This has definitely been soup weather, and creamy soups are my favorite.
